Berry bowl with goji lemon balm coulis

VEGAN – GLUTEN FREE – HIGH FIBER – OIL FREE – RAW

Packed with nutrients, this dessert is naturally sweetened with goji berries and wonderfully refreshing and relaxing thanks to lemon balm tea. A great way to start or end the day.

PREP: 3 MINUTES – COOKING: 10 MINUTES FOR STEEPING – PORTIONS: MAKES ABOUT 1½ CUPS OF COULIS, ENOUGH FOR 6 BERRY BOWLS.

INGREDIENTS
1 lemon balm tea bag or a bunch of fresh lemon balm sprigs
1 cup boiling water
1 lemon
1 cup goji berries
4 cups of any combination of strawberries, blueberries, raspberries and blackberries

PREPARATION
  1. To make the coulis steep the tea bag or lemon balm sprigs in the boiling water for 10 minutes. Remove tea bag or sprigs. Put tea, goji berries and zest and juice of lemon into a high-powered blender. Blend until you get a smooth consistency.
  2. Wash berries carefully and divide between bowls. Pour coulis over berries and decorate with fresh mint or a sprig of lavender if you are lucky enough to have some in your garden.
